Winemaking:
• Harvested by hand in boxes. The harvest is done in several steps to try to pick the grapes in the best maturation;
• De-stemming and soft crushing;
• 14 days of maceration in oak vats (this is the time when the wine acquires its particular coppery colour) and start the fermentation with indigenous yeasts;
• The wine is then aged in oak barrels of 225 liters for a period of 24 months;
• After the bottling then the wine is aged in the bottle for 12 months before release.
