Vinification: The grapes are pressed softly, strictly whole, with a yield
of no more than 50% in must. It is divided into small stainless steel
tanks and fermented at a controlled temperature. About 30% of the
must is fermented in French wooden barrels and left to rest until it is
blended with the other wines. After 8 months, once the cuvee have
been made, the refermentation takes place in a cave at a natural and
constant temperature all year round at about 55 degrees Fahrenheit.
The wine is added with liqueur and then after a few months it is put on
the market.
