
Vinaccia di Nittardi is distilled from freshly pressed pomace of the Sangiovese grape of Fattoria Nittardi. To ensure a superior quality, the pomace is manually pressed with a gentle hand. Within the same day the fresh, juicy pomace is brought to the Distilleria Pilzer, a small family-run business in Faver in Valle di Cembra near Trento, where it is immediately distilled to 70% alcohol.
Since 1957 the Pilzer Family has employed the „Tullio Zadra“ distillation method, named in honor of its inventor, which is based upon the water-bath method with a discontinuous distillation process. Maturation takes place for 18 months in fine-grained, lightly toasted 300-liter French oak barrels. To achieve the desired alcohol content of 42°, the pure water of the Valle di Cembra is distilled and added. Lastly, the grappa is filtered at a temperature of minus 8° and then filled into 0.7-liter bottles.
Ageing: in wood, for at least 48 months
Sensory properties: Lightly transparent amber color, strong nose with a finish of delicate blackberry. With a pronounced elegance combined with well-balanced floral and fruit aromas, fine traces of vanilla and ripe, warm notes of wood.
