Cantine Spumanti Ress is located in northern Italy, in the Province of Trento, the climate is Alpine, Continental, and Mediterranean: this variable Trentino climate contributes to defining the Trento doc character, together with other unique aspects of the territory.
The cool temperatures from the Dolomites combined with the mild temperature of nearby Lake Garda form distinct characteristics; and the significant diurnal temperature variations, typical of the Trentino territory, allow the grapes to develop acidity and great aromatic complexity.
The mountains have a true signature on the wines made from them. Vineyards grown between 200 and 900 meters (656 to 2952 feet) above sea level, in an environment characterized by significant daily temperature variations, giving the grapes aromatic complexity, elegance, and acidity. In addition, the soils have excellent drainage and aeration, as they are rich in limestone and have a high amount of silica. This lends to great nuances in aroma. The high altitudes and mountains are a great resource for Trento doc. .
Ress Winery is incredibly located in a cave carved into the rock, which during the First World War was a refuge, today it offers a suggestive and unique environment, particularly suitable for the creation of this type of wine. This favors an excellent refinement, which is part of the project which is to aim for an ever-higher quality.
Achieve this by taking care of all stages of production in a maniacal way: from the vineyard to the various stages of processing, from disgorgement to aging. But not only that, also in the phytosanitary defense our culture of farmers who have a great respect for the land, has led us to make a defense that is very soft, thanks to a constant control of the development of the vine during the most delicate phase of development. A defense that has less impact than certain biological product..
Winegrowers since the mid-1900s, this family, thanks to the experience of Luigi, the father, and the studies and training of their children, in recent years has dedicated its energies to the production of Trento doc in the different versions Brut, Rosè and Riserva
The Brut Rose 'Maria Rosa and the Emilio Riserva take names of those who have been loved and important in the family. The older son, Marco Ress, born in San Michele all’Adige, worked outside the province as a consultant for 7 years, making great spumanti in Francia Corta.
In 2013 there was the sudden death of his mother and the consequent decision to return to the family business where together with his father Luigi and brother Franco he developed a first-rate winery located largely on the suitable hills of San Michele, where they produce Chardonnay and Pinot Nero grapes, all used as a sparkling wine base..
The grapes of Chardonnay are softly pressed, strictly whole, with a yield of no more than 50% in must. The must obtained is divided into small stainless-steel tanks and fermented at a controlled temperature. About 30% of the must is fermented in French wooden barrels and left to rest until it is blended with the other wines. After a period of about 8 months, once the cuvee has been made, the refermentation takes place in a cave at a natural and constant temperature all year round of about 13 degrees. After a stop on the lees for about 30 months, the wine is disgorged and after a few months it is put on the market. .Trento DOC Brut, as described by Marco Ress
