Cantine Spumanti Ress is located in northern Italy, in the Province of Trento, the climate is Alpine, Continental, and Mediterranean: this variable Trentino climate contributes to defining the Trento doc character, together with other unique aspects of the territory.
The cool temperatures from the Dolomites combined with the mild temperature of nearby Lake Garda form distinct characteristics; and the significant diurnal temperature variations, typical of the Trentino territory, allow the grapes to develop acidity and great aromatic complexity.
The mountains have a true signature on the wines made from them. Vineyards grown between 200 and 900 meters (656 to 2952 feet) above sea level, in an environment characterized by significant daily temperature variations, giving the grapes aromatic complexity, elegance, and acidity. Selected varietals
The grapes of Chardonnay are softly pressed, strictly whole, with a yield of no more than 50% in must. The must obtained is divided into small stainless-steel tanks and fermented at a controlled temperature. About 30% of the must is fermented in French wooden barrels and left to rest until it is blended with the other wines. After a period of about 8 months, once the cuvee has been made, the refermentation takes place in a cave at a natural and constant temperature all year round of about 13 degrees.
